3 Slices of bacon, ham or Sausage, diced and cooked

1/4 cup diced cooked potato

1/4 cup shredded cheese (your choice)

2 tablespoons salsa

1 12-inch Flour Tortilla

Preheat nonstick 8” pan and spray with Pam or 1T olive oil.   Scramble eggs and pour in pan.  As eggs begin to cook, pull them from sides with a spatula and toss gently. Begin to mix with the remaining ingredients, bacon and potato.   Heat the tortilla in a skillet.  When warm, begin to place cooked ingredients (eggs, bacon, potato and cheese) on top of tortilla.  Begin to roll and wrap by rolling forward and folding sides in until ingredients are completely wrapped.  Use salsa to taste.
